Stuffed Sun-dried Tomato Flaxseed Cookies
I've been craving something savory, not eating bread is hard? These hit the spot... very low carb and amazing as an afternoon snack
- 2 cups Flaxseed meal
- 8 Sun-dried Tomatoes
- 2 Tbsp Oil
- Add flaxseed meal, oil and spices of your choice (I used a tbsp of BBQ seasoning) to a bowl and mix well, start to add a little water until you form a dough. The dough should be dry, hold together and be easily malleable.
- Roll into a ball and section evenly into 8 portions. Take each portion and mold around one sun-dried tomato while also trying to make a circular biscuit shape.
- Add to a preheated 180 degree oven and bake for 10-12 minuets.
- Leave to cool. Served best with homemade mayo or pesto.
