- Herb paste: Fresh Rosemary, Thyme, Oregano, Lemon zest, Coconut oil
- Preheat oven to 190°C fan forced.
- Make herb paste by combining ingredients in a herb grinder.
- Debone fish and lay it on some baking paper before folding it close. Use some wet string to tie it down or wrap it in tin foil (you want to keep it as tightly sealed as possible so the fish steams).
- Cook for 10-12 minutes depending on the size of your portions.
