Overnight Snapper Civeche

Ingredients:

  • 1 piece fresh snapper in 1 cm chunks
  • Juice and zest of one large lemon
  • Juice and zest of one lime
  • 1 avocado
  • 1 shallot, diced
  • 1 tomato, diced
  • 1 small green chilli seeds in (optional)
  • 1 handful of fresh purple and Thai basil or just plain if that's all you have

Instructions:

  1. Simply combine the fish, chilli, shallot and lemon and leave covered in the fridge overnight, before serving add the rest of the ingredients.
