Overnight Snapper Civeche

Ingredients:
- 1 piece fresh snapper in 1 cm chunks
- Juice and zest of one large lemon
- Juice and zest of one lime
- 1 avocado
- 1 shallot, diced
- 1 tomato, diced
- 1 small green chilli seeds in (optional)
- 1 handful of fresh purple and Thai basil or just plain if that's all you have
Instructions:
- Simply combine the fish, chilli, shallot and lemon and leave covered in the fridge overnight, before serving add the rest of the ingredients.
