Grilled Zucchini with a Basil Kale and Baby Beet Leaf Salad

Ingredients:

  • Zucchini
  • 2 Tbsp Coconut oil
  • 1 tsp Paprika
  • 3 sprigs Oregano
  • Feta Cheese
  • Salad: Basil, Kale, Baby Beet Leaves

Instructions:

  1. Marinade zucchini with coconut oil, paprika and oregano.
  2. After marinating top with feta cheese. Cook for 20 minutes on 180°C on grill and tray in the middle of the oven.
  3. Mix salad in leftover marinade to coat. Serve.
