- 2 Chicken Breasts
- 4 pieces of Bacon
- Green Beans
- Salad Greens
- 1 Eggplant
- 1 Lemon
- Paprika (for the Chicken)
- Preheat oven to 220°C on fan bake.
- Place the chicken inside the oven safe dish with bacon, paprika and lemon juice and place in the oven for 30 minutes.
- Take the eggplant and peel thins slices avoiding the seeds in the middle, then fry in butter until crisp.
- Steam green beans.
- Serve on your choice of green salad and enjoy.
