Broccoli and Chorizo Salad with Pine Nuts and Zucchini

Ingredients:

  • Coconut Oil
  • 1 green Chilli
  • 1 clove Garlic (crushed)
  • Chorizo
  • Zucchini
  • Broccoli
  • Pine nuts

Instructions:

  1. Heat coconut oil in a pan and add green chilli and garlic (I used smoked garlic I had).
  2. Add chorizo and brown.
  3. Add zucchini and broccoli and cover until cooked (some charring is fine).
  4. Lastly add pine nuts until toasted and then serve.
