Beef Korma with Lentils

Ingredients:

  • 1-2 Star Anise
  • 1 stick of Cinnamon
  • 1 Tbsp Coriander powder
  • 1 Tbsp Paprika
  • 1 Tbsp Mixed Spice
  • 1 Tbsp Nutmeg
  • 1 tsp diced Garlic
  • 1 tsp diced fresh Ginger
  • 1 diced Red Onion
  • 1 can Lentils
  • Handful of Raisins
  • 1/4 cup Clean Paleo Original Crunch Cereal or alternatively ground Almonds
  • 1 200 ml box of “Bum as Coconut Cream”
  • 500g diced Beef
  • Butter
  • Water

Instructions:

  1. Heat butter in a pan before adding the garlic and whole star anise and breaking the cinnamon stick up and adding that too. Let toast for 2 minutes or so then add your onions and let soften.
  2. Add your beef and ginger and cook on a medium to high heat until the meat is seared on each side.
  3. Add your coriander, paprika and coconut cream then reduce the heat to a simmer before adding 1 cup of hot water and covering for 35-40 minutes to cook. You could also leave it on longer or until the meat falls apart if you have time.
  4. Now add the clean paleo breakfast original crunch cereal, nutmeg powder, raisins and lentils and simmer for another 10 minutes. If the sauce isn‰'t thick enough keep simmering until it‰'s nice and thick. I added extra coconut cream, raisins and nuts on top before serving.
