Banana Hazelnut Bread


  • 2 eggs
  • 1/3 cup melted coconut oil
  • 1/3 cup honey
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 3-5 over ripe bananas
  • 1 3/4 cup whole wheat flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup hazelnuts
  • 1 banana for decoration


  1. Pre-heat oven to 160°C. Grease a small to medium loaf pan and set aside.
  2. In a bowl, whisk the flour, cinnamon, baking soda and salt. Set aside.
  3. In another bowl beat eggs, oil, honey, milk and vanilla for 2 minutes. Mash and stir in the bananas, flour mixture and hazelnuts.
  4. Pour batter into greased pan, sprinkle with some more cinnamon and decorative banana slices. Bake for 50-55 minutes or until a toothpick inserted comes out clean. Let cool and serve.
