Baked Salmon with a Mean Green Salad and Parsnip Chips

Ingredients:

  • 400g de-boned Salmon
  • Soy sauce
  • Coconut sugar
  • Chilli
  • Parsnips
  • Cayenne pepper
  • Tumeric
  • Coconut oil
  • A green Pawpaw
  • Spanish Tomato (diced)
  • 1 Avocado (diced)
  • 2 Limes
  • Salt and Pepper

Instructions:

  1. Heat oven to 200°C
  2. Salmon: Make a tin foil parcel for the salmon and add soy sauce, coconut sugar and chili and seal. Place parcel in the oven for 30 minutes. You‰'ll know when it‰'s done when you place a fork into the flesh and turn the fork, it should flake.
  3. Chips: Quarter and trim parsnips. Coat in cayenne pepper, turmeric and coconut oil. Lay on a tray and cook for 15 minutes turning every 5 minutes.
  4. Mean green salad: Grate pawpaw into a bowl with Spanish tomato from Farros (you could use normal tomato) and avocado. Squeeze the juice of the limes over the salad before seasoning with lots of black pepper and Himalayan sea salt.
