Stuffed Sun-dried Tomato Flaxseed Cookies

I’ve been craving something savory, not eating bread is hardÂ đŸ˜‚Â these hit the spot… very low carb and amazing as an afternoon snack

Stuffed Sun-dried Tomato Flaxseed Cookies

Serves: 4 Prep Time: 5 Minutes Cooking Time: 15 Minutes

Ingredients

  • 2 cups Flaxseed meal
  • 8 Sun-dried Tomatoes
  • 2 Tbsp Oil
  • Water
  • Spices
  • Salt

Instructions

  1. Add flaxseed meal, oil and spices of your choice (I used a tbsp of BBQ seasoning) to a bowl and mix well, start to add a little water until you form a dough. The dough should be dry, hold together and be easily malleable.
  2. Roll into a ball and section evenly into 8 portions. Take each portion and mold around one sun-dried tomato while also trying to make a circular biscuit shape.
  3. Add to a preheated 180 degree oven and bake for 10-12 minuets.
  4. Leave to cool. Served best with homemade mayo or pesto.
