Slow Cooked Eye Fillet of Pork on Steamed Kale
- Fillet of Pork
- 1 Onion
- 1 clove of Garlic
- 1/3 cup of Red Wine
- 1 can of crushed Tomatoes
- Take your fillet of pork and rub it with salt, rosemary, thyme, chilli and paprika then dice into bite size chunks and brown in a pan. Once browned set aside.
- Cut up onion and sauté with paprika, chilli and garlic and then add the red wine. Cool for 5 minutes before adding one can of crushed tomatoes (rinse the can with a bit of water and add this as well), cover and leave on low heat for 1 1/2 hours. When the sauce gets dark add some milk and stir through (this makes the sauce creamy).
- Steam some kale and serve.
