Eggs in Bread Bacon Buttie with Kale and Homemade Chilli Mayo
- 2 pieces of Vogels bread
- Coconut Oil
- 2 Eggs
- 4 pieces of Bacon
- Smoked Paprika
- Fresh Kale (shredded)
- Using a circular jar lid or other tool cut holes in your bread.
- Add coconut oil to a hot pan before adding the bread and eggs in the centre. The trick here is to break the egg over the sink and discard some of the white so the egg fits perfectly inside the bread. I like to cook the eggs for 4-5 minutes each side so it’s not too messy when you eat.
- While I was doing this my bacon was in the oven on fan forced grill (max heat) and dusted with smoked paprika. These take about 4 minutes each side.
